Jamaican Breadfruit Pudding Recipe

Ingredients:

  • 1 1/2 cups coconut milk
  • 1 cup sugar
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp salt
  • 2/3 cup all-purpose flour
  • 2 cups breadfruit, grated
  • 2 eggs
  • 1/2 cup raisins
  • 1 cup wine
  • 1 tsp margarine

Method:

  1. Preheat oven to 350°F (180°C).
  2. In a medium bowl, dissolve the sugar in the coconut milk. Add the spices, salt, and vanilla. Beat the eggs and add to the spiced milk mixture. Place the grated breadfruit in a large bowl and add the flour, mixing thoroughly. Add the milk mixture to the breadfruit and flour and beat together. Add the wine and raisins, combining all ingredients well. Pour the batter into a greased pudding pan and bake until a toothpick inserted in the center of the pudding comes out clean. Pour sorrel-rum sauce over the pudding, decorate as desired, and serve.
