- 2-1/4 (18 oz) cooked lobster
- 1/3 cup onion
- 1/3 cup celery
- 1/3 cup cubed avocado (optional)
- 1/3 cup cubed mango
- 1/3 cup green pepper
- 1/3 cup cucumber
- 3/4 cup mayonnaise
- 3 tablespoons fresh lemon or lime juice
- salt, pepper and hot pepper to taste
- Chop onion, celery and pepper; cube cucumber, mango and avocado.
- Combine citrus juice and mayonnaise.
- Gently toss all ingredients.
- Serve in lobster tails, garnished with lemon slices.
- Serves 8
