Jamaican Carrot Salt Fish Fritters Recipe – Stamp and Go

The original Jamaican “fast food,” getting its name “stamp and go” from people stamping their feet to indicate their hurry and then taking it to eat on the run. These savory deep-fried treats are perfect for parties or snacking.

Ingredients:

  • 1 egg
  • 1 table milk
  • 1 cup cooked carrots, mashed
  • 1/2 sweet pepper, chopped
  • 1 small onion, chopped
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup codfish, flaked
  • 1/2 tsp baking powder
  • Oil for deep frying

Method:

  1. Beat together the egg and milk.
  2. Add all other ingredients.
  3. Mix well.
  4. Drop by spoonful into hot oil.
  5. Fry until golden brown.
  6. Drain and serve with garnish of your choice.
