Carrot Cake

INGREDIENTS :

  • 3 cups of shredded raw carrots
  • 4 beaten eggs
  • 1 3/4 cups brown sugar
  • 2 1/2 cups flour
  • 1 1/2 cup oil
  • 1 teaspoon vanilla
  • 1 1/2 cinnamon
  • 3/4 nutmeg
  • 1/2 teaspoon mixed spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

METHOD:

  1. Combine carrot and sugar and mix
  2. Add beaten egg, then oil and vanilla and mix well
  3. Combine and sift together the flour, cinnamon, spices, nutmeg, mixed spice, baking soda and salt
  4. Slowly add the dry ingredients to the wet mixture
  5. Pour into greased baking container
  6. Bake for 40 minutes at 350F
