A traditional dish made throughout the Caribbean is callaloo, which originated in West Africa and differs slightly in each country. The callaloo prepared in Jamaica is generally made from a mix of amaranth with onions, scallions, and salt that is steamed. Similar to cooked spinach, a dish of callaloo should be part of any Jamaican dining experience.
