Ingredients:

  • 4 ozs Butter or Margarine
  • 2 large Eggs
  • ½ cup Sugar
  • 1 cup Raisins (optional)
  • 2 tbsp. Instant Coffee
  • 1 tsp. Salt
  • ½ cup strongly brewed Jamaican Blue Mountain Coffee
  • 2 tbsps. Yeast
  • 1 cup Milk

Method:

  • Grease and flour big bread pan.Melt yeast in ½ cup of warm water.
  • Melt butter and scald milk, add butter, milk, sugar with salt.

  • Cool and add eggs.
  • Ensure you cool the coffee, and then add to the mixture above.
  • Add raisins. Mix with yeast mixture.
  • Gradually add flour.
  • Lay flour on a board and knead dough for a minimum of 5 minutes.
  • Put in greased bowl and allow it to rise for an hour or until it doubles
