Jamaican Coffee Nutty Rum Cake Recipe

Ingredients:

  • 1 tsp. Almond Essence
  • 3 1/2 tsps. Baking Powder
  • 1 cup Mixed Nuts
  • 1 tsp. Mixed Spice
  • 1 1/2 cups White Sugar
  • 1/2 cup Instant Coffee
  • 1/2 cup Milk
  • 1 tsp. Cinnamon
  • 3 medium size Eggs
  • 2 tbsps. Red Label Wine
  • 1 tsp. Vanilla
  • 2 1/2 cups Cake & Pastry Flour
  • 1/2 cup White Rum
  • 1 cup Margarine
  • 1 tsp. Mixed Spice

Method: 

  1. Heat up your oven to 180°C first
  2. Chop nuts into pieces and set aside.
  3. Grease your 25cm baking pan and sprinkle the pan with some already chopped nuts.
  4. Include eggs, sugar, butter, vanilla and almond essence into a bowl and beat for 10minutes.
  5. Sift flour, baking powder, coffee, mixed spice and cinnamon.
  6. Add flour and milk alternatively,starting and ending with flour.
  7. AddRed Label wine to the mixture and empty mixture into the greased baking tin.
  8. Put in oven to bake for about 35 minutes and get ready the rum glaze.
