While not a ‘Caribbean” soup, this leek soup is very comforting on a cold winter’s night or as in my case.. when battling the winter flu.

For this chicken and leek soup you’ll need…

3 Leeks (trimmed, washed)
2 cloves garlic
2-3 cups chicken
6-8 cups chicken broth
3 sprigs thyme
1 tablespoon parsley
1/4 teaspoon black pepper
1/4 teaspoon pepper flakes
1/2 teaspoon salt
2 Yukon Gold Potatoes
2 sweet potatoes
*I used 2 tablespoon olive oil to brown/cook the chicken which I used to start the soup
