Jamaican Pick Up Saltfish Recipe

A favorite in Jamaica and throughout the Caribbean, the dish is called “pick up” because the salt cod used in the dish is torn into small pieces after the bones have been removed – perfect for “picking up” with your fingers. Frying the fish pieces with onions, hot peppers, and ketchup gives just the right combination of salt and heat.

INGREDIENTS :

  • 1/2 pound salt fish
  • 1/2 onion
  • 1/4 tomato
  • 1 scotch bonnet pepper
  • 2 tablespoons ketchup

METHOD:

  1. Soak or boil saltfish to remove most of the salt, drain.
  2. Cut up the onions, tomato and scotch bonnet (optional) and saute in a small bit of oil in a saucepan.
  3. Remove and place in a dish.
  4. “Pick up” (break in to small portions and remove any bones) saltfish and fry in the same saucepan with light oil.
  5. Add seasonings (onions, tomato, scotch bonnet pepper) with ketchup and cook for 2-3 minutes.
  6. Serve with one of the following or combination of all: Jamaican water crackers, Fried Green Plantations, Yellow or White Yam, Flour dumplings and Boiled Bananas
