    Pan-fried Steaks with Italian Sauce</span>


    Ingredients:
    • 4 sirloin steaks, trimmed
    • 2 tbsp (25 ml) olive oil
    • 1 onion, finely chopped
    • 2 garlic cloves, crushed
    • 14 oz (398 ml) can chopped tomatoes
    • 6-3/4 tbsp (100 ml) white or red wine
    • 2/3 lb (300 g) tagliatelle
    • 1 tbsp (15 ml) capers, drained and rinsed
    • 12 pitted black or green olives, halved
    • 2 tbsp (25 ml) chopped fresh basil

    Method:
    1. Rub steaks with 1 tbsp (15 ml) olive oil and some black pepper. Heat large frying pan; cook steaks, about 2-1/2 minutes per side for rare, 4 minutes per side for medium, and 7 minutes per side for well done. Remove to plate using slotted spoon and keep warm.

    2. Add remaining oil to pan, then add onion and garlic, and cook gently 5 minutes or until softened. Stir in tomatoes and wine. Cook gently 5-10 minutes, stirring occasionally
    to break down tomatoes.

    3. While sauce is cooking, cook pasta according to package instructions. Drain. Stir capers into sauce with olives and basil; season to taste.

    4. Return steaks to frying pan to heat through, spooning sauce over meat. Divide pasta among four plates. Serve steak and sauce over top.

      Herbed Wild Salmon

      This nutrient-packed recipe is delicious and loaded with those important Omega-3 fatty acids, not to mention high in vitamins A, B, C and fiber. A great example of a balanced meal too!

      SERVES ONE (approximately 400 calories)

      Ingredients

      Wild Salmon 3 ozs
      Lemon, squeezed 2 slices
      Garlic, minced 1 small clove
      Dill, fresh, minced 1 tsp
      Pepper dash

      Sweet Potato 1 medium
      Light sour cream 1 tsp
      Chives, chopped 1 tsp

      Green beans, fresh 1 cup
      Yellow beans, fresh 1 cup

      Lemon wedge garnish

      Instructions

      * Preheat oven to 400 degrees
      * Wash sweet potato and bake in oven till done (approx 30 to 40 minutes)
      * Sprinkle the salmon evenly with the minced garlic, dill, lemon juice and pepper. Wrap in foil.
      * Place wrapped salmon in shallow baking dish and bake at 400 degrees until done. White liquid will rise to top when done - approx 20 to 30 minutes depending on thickness of fish.
      * Clean beans and remove ends. Steam lightly - they should still be semi-crisp. Drain and add lemon and pepper to taste. Cook beans 5 minutes before serving the meal so they are still warm.
      * When salmon is done, serve on a plate with green beans.
      * Slice baked sweet potato in half. Top with light sour cream and chives.

                Mediterranean Chicken

                What You Need!
                4 small boneless skinless chicken breasts (1 lb./500 g)
                1 small onion, chopped
                1 tsp. dried oregano leaves
                1 can (19 fl oz./540 mL) Italian-style diced tomatoes, drained
                1/4 cup KRAFT SIGNATURE CALORIE-WISE Sundried Tomato and Oregano Dressing
                2 tsp. minced garlic
                1/4 cup sliced stuffed green olives
                3 cups hot cooked long-grain brown rice

                Make It!

                HEAT large nonstick skillet sprayed with cooking spray on medium heat. Add chicken and onions; sprinkle with oregano.

                COOK chicken 3 min. on each side or until chicken is lightly browned on both sides and onions are crisp-tender. Add tomatoes, dressing and garlic; stir gently. Continue to cook 4 to 6 min. or until chicken is cooked through (170ºF), turning chicken after 3 min. Stir in olives.

                SPOON rice onto serving platter; top with the chicken and sauce.

                  Double Potato Gratin


                  Ingredients

                  3 lb (1.5 kg) Yukon Gold or baking potatoes (about 6 large)
                  1 lb (500 g) sweet potatoes (about 2)
                  1 tbsp (15 mL) butter, divided
                  ¼ cup (50 mL) olive oil
                  2 tsp (10 mL) salt
                  1 tsp (5 mL) pepper
                  1 tbsp (15 mL) chopped fresh rosemary or thyme (or 1/2 tsp (2 mL) dried)


                  Get Cooking!

                  1. Peel potatoes and sweet pota­toes. Cut them into slices ¼-inch (5-mm) thick.
                  2. Place a piece of parchment paper at the bottom of a 9-inch (2-L) baking dish and cover with half the butter. Arrange a layer of regular potatoes over bottom of dish. Sprinkle pota­toes with a little olive oil, salt, pepper and rosemary. Con­tinue to layer and sprinkle potatoes until you have used half the potatoes.
                  3. Arrange sweet-potato slices on top, sprinkling with oil, salt, pepper and rosemary after each layer.
                  4. Continue to arrange remain­ing potatoes in layers on top of sweet potatoes, sprinkling after each layer.
                  5. Butter another piece of parch­ment paper with remain­ing butter. Place paper, butter-side down, on top of potatoes. Weigh down paper with a heavy oven­proof dish or foil-covered bricks.
                  6. Bake in a preheated 425°F (220°C) oven for 1 hour, or until potatoes are tender. Remove weights and the top paper. Let pota­toes sit for 5 minutes.
                  7. Invert dish onto a serving platter and remove remaining piece of parchment paper. Serve with the best-looking side up.


                  Makes 6 to 8 servings

                    Pot a mixup

                    Brown ground beef wid onion an seasoning salt, drain.
                    put it back in the pot and add pepper, onion powder and garlic powder and chili powder to taste.
                    add a can of stewed tomatoe (I used italian style)
                    2 cups par boiled brown rice
                    3 cups water
                    can of red kidney beans
                    likkle chups more water.

                    when it start to boil taste it an si if you need more seasoning salt.

                    Bring to a boil and then turn down low till the rice cook.

                      This is what I made friday, only I use cabbage instead of rice

                            cornish game hens. just bake them like you're baking chicken until they're brown don't use salt though.

                            when it's time to moisterize with Goya Red Cooking Wine. cover the baking dish and add in all the seasonings that Jamaican people usually use. thyme, scallion garlic. you don't need much for cornish hen, as they have a special gamy taste. the real cornish hens that is.

                            one is the equivalent of about a regular chicken breast as far as meat is concerned.



                            i swear, some of the ones i see being passed off for cornish hens are really small chickens, because cornish hens are small.

                              Curry Meatloaf
                              2 lbs (1 kg) lean ground beef or ground turkey
                              2 tbsp (30 mL) curry paste or 1 tbsp (15 mL) curry powder OR 1 tbsp (15 mL) chili powder.
                              1 egg
                              1/2 cup (125 mL) bread crumbs
                              1/2 cup (125 mL) yogurt or sour creamyogurt or sour cream
                              1/2 cup (125 mL) fresh coriander, chopped
                              1 small onion, chopped
                              2 cloves garlic, minced
                              1 red or green pepper, chopped
                              1/2 tsp (2 mL) salt
                              1/2 tsp (2 mL) pepper
                              1/2 tsp (2 mL) chili pepper
                              1 tsp (5 mL cumin
                              2 mangoes, peeled, seeded
                              Preheat oven to 350?F (180?C). In a mixing bowl combine the lean ground beef, curry paste, egg, bread crumbs, yogurt, tarragon, coriander, onion, garlic, red or green pepper, salt and pepper. Place mangoes in centre and form a loaf around them. Mix and place in baking dish. Bake in the oven for 25-30 minutes.

                              Makes 4 servings.
