    Here are some good tasting and nutritious low carb recipes for those of you who maintain a low carb diet.

    Oxtail Stew

    3 oxtails with separated joints (get the meatier pieces)
    1 large yellow onion, chopped
    2 cups stock
    1 cup water
    2 cups of red wine
    1 garlic clove, minced
    2 to 3 cups chopped vegetables - carrots, celery, parsnips, turnips, chocho
    1 large green and red pepper each, chopped
    1/2 cup raisins
    1/4 cup tomato paste
    Seasoning - garlic salt and black pepper, thyme, one bay leaf

    Preheat oven to 350 degrees F.
    Season oxtails with salt and pepper. Sear in a tightly covered casserole dish on all sides until golden brown. Add 1/4 cup of the chopped onion, cook until translucent. In a separate pan, heat stock, water, and wine together. Add stock mixture to meat in casserole pan. Add a teaspoon of salt, 1/2 teaspoon of black pepper. Bring to simmer. Place in oven and cook for 3 hours. Remove from oven, add vegetables, the rest of the onion, green and red sweet peppers, raisins, tomato paste, garlic, thyme, bay leaf. Return to the oven and cook for another hour. Remove from oven, let cool overnight. The next day, skim the fat off of the top. Reheat to a simmer, simmer off excess liquid, serve.

    Kale and Roasted Vegetable Soup Recipe

    If you can't get Kale, substitute with Spinach... work just the same

    3 medium carrots, peeled and quartered lengthwise
    2 large tomatoes, quartered
    1 large onion, cut into 8 wedges or 4 or 5 slices
    1/2 small butternut squash, peeled, seeded, cut lengthwise into 1/2 inch thick wedges
    6 garlic cloves
    1 Tbsp olive oil (extra virgin or otherwise)
    6 cups or more of vegetable broth
    4 cups of finely chopped kale
    3 large fresh thyme sprigs
    1 bay leaf
    15 oz green beans
    Preheat oven to 400 degrees F (reduce heat if using oven fan). Spray rimmed baking sheet with nonstick oil spray. Arrange carrots, tomatoes, onion, squash, and garlic on sheet. Drizzle with olive oil. Sprinkle with salt and pepper. Toss to coat. Bake until vegetables are brown and tender, stirring occassionally, about 45 minutes.
    Transfer carrots and squash to work surface. Cut into 1/2 inch pieces; set aside. Peel garlic cloves; place in processor. Add tomatoes and onion; puree until almost smooth. Pour 1/2 cup broth onto baking sheet; scrape up any browned bits. Transfer broth and vegetable puree to large pot. Add 5 1/2 cups broth, kale, thyme and bay leaf to pot. Bring to boil. Reduce heat. Simmer uncovered until kale is tender, about 30 minutes.
    Add beans, carrots, and squash to soup. Simmer 8 minutes to blend flavors, adding more broth to thin soup if necessary. Season with salt and pepper. Discard thyme sprigs and bay leaf.

      Portobello Parmesan
      If you enjoy mushrooms as much as I do, you'll love this one.
      1-2 large, fresh, firm portobello mushrooms
      olive oil (extra virgin or otherwise...)
      1/4 cup of finely chopped onion
      1 clove garlic, chopped
      1 Tbsp minced parsley
      Pinches of dried basil, marjoram, and oregano (any type of italian seasonings are good...)
      1 teaspoon salt
      1/4 teaspoon black pepper
      1 24 oz can of tomato sauce
      1 egg
      1/4 cup milk (I use vanilla soy milk)
      bread crumbs - finely ground
      8 oz sliced mozzarella cheese
      1/2 cup grated Parmesan cheese
      In a large skillet, heat a couple tablespoons of olive oil, add onions and garlic and saute over low heat until onions are translucent. Stir in parsley, herbs, salt, pepper, and tomato sauce. Simmer for 30 minutes.
      Slice the mushrooms into 1/4 inch thick slices. Remove the spongy area underneath the more solid cap of the mushroom. In a bowl, beat the egg and milk. Dip the slices of mushrooom into the egg mixture, dust with bread crumbs. In a large skillet, heat a couple tablespoons of olive oil to medium high. Fry the porcini on both sides, adding more oil as needed, until golden brown. In a 2-quart baking dish, layer sauce, mushrooms, mozzarella, topping layers off with Parmesan cheese. Bake at 350 degrees F for 1 hour. (mek sure that you check the oven... I use 350 deg, but my oven gauge may be a bit off)
      Like many stews and casseroles, this dish is even better the following day, after the flavors are allowed to seep into the mushrooms. You may want to make it ahead of time and reheat it when you want to eat it.

        Potatoe Leek Soup

        awright, mi know, it sey "low carb", but I could not resist. I just love this recipe, and it's nutritious!

        3 large leeks, cut lengthwise, separate, clean (leeks tend to have dirt trapped in it, so wash *very good), chopped
        2 Tbsp butter
        2 cups water
        2 cups chicken broth
        2 lbs potatoes, peeled, diced into 1/2 inch pieces
        Salt & Pepper
        Marjoram - dash (if you don't have marjoram, use any herb sauce, dill, and rosemary are perfect)
        Tabasco sauce or other red chili sauce

        Cook leeks in butter with salt and pepper, cover pan, cook on low heat for 10 minutes. Check often. Do not brown leeks! Browning will give leeks a burnt taste.

        Add water, broth, and potatoes. Cook for 20 minutes. Scoop about have of the soup mixture into a blender, puree and return to pan. Add dash of marjoram and chili sauce to taste - about 1/4 teaspoon. [img]/forums/images/graemlins/laugh.gif[/img]

          Coconut Toast

          Use brown bread, works just as good

          1 cup flaked coconut
          1 cup sugar
          1/2 cup melted butter
          1 egg beaten
          1 teaspoon vanilla
          12 slices of brown bread

          In bowl combine coconut, sugar, butter, egg and vanilla. Mix well

          Spread over each slice of bread.

          Place on ungreased baking sheet.

          Bake at 350 F for 15-20 minutes or until lightly browned.

            mi cannot resist, mi is an ole rum head, but this good if you've never tried it...

            Bailey's and Coffee

            1 cup hot coffee (decaffienated(sp?) is o.k.)
            1 Tablespoon heavy cream
            1 Tablespoon Bailey's Original Irish Cream or Jack Daniels
            Dark brown sugar to taste (Splenda for those who fraid of dark brown sugar)

            Mix together in order shown. Soothing and relaxing in the evening!
