    Arjen, here is G2's from the archives:

    Jamaican Spiced Bun

    1 bottle beer or stout (i use beer)
    1 teaspoon mixed spice (optional,but good)
    1 teaspoon cinnamon

    1 Teaspoon ground mace
    OR
    1 teaspoon grated nutmeg

    1/2 teaspoon ground ANISE SEED (a must)
    11/2 cups brown sugar
    1 desert-spoon butter or margarine
    1 desert-spoon honey

    Place these 9 ingredients in a saucepan and heat on low temp. until it all melts.

    ALLOW TO COOL.

    1 cup raisins

    add to cooled beer mixture

    2 eggs
    1 teaspoon vanilla
    1 desert-spoon browning

    Add these 3 ingredients to cooled beer mixture

    ADD

    2 teaspoon baking powder
    1/2 teaspoon salt

    TO

    3 cups flour

    Add the cooled beer mixture to the flour mixture bake at 350'
    Set timer for 50 mins.depending on your oven, check doneness with a cake tester at approximately 45 minutes.

    Turn out of tin and brush with 2 tablespoon of honey diluted with 1 teaspoon water.

      Okay, I have two questions for Jamaican cooks:

      What is a dessert spoon? Is that a tablespoon?

      Browning...in the past I have substituted something like Kitchen Bouquet or the like....is that what is really required here? I wish I would remember to buy "browning" in the market in JA!

          Well, I would call that a teaspoon (I set a proper table!), and I have seen G2 use that in recipes, so that is why I thought it might be different. I imagine Guinness would be the beer of choice here?

            Guiness Stout should be easy to fine..but so should Dragon Stout

            Not familiar with Kitchen Bouquet..we use browning purchased here..

                  I baked some buns the other day to give to my friends and relatives. I ended up using my mom's old recipe and it came out better than nuff a dem in di stores now.

                      Makes about 3-4 good sized buns.

                      BUN RECIPE

                      3 cups brown sugar
                      2 bottles stout
                      4 ozs. Margarine
                      4 ozs. Honey or wet sugar
                      4 ozs. Molasses

                      Boil together the above ingredients for 3 minutes until butter is melted.
                      Allow to cool and add 2 ozs. vanilla when cool.


                      8 cups flour
                      8 tsps. Baking powder
                      1 tsp. salt (if butter is not salted)
                      Cinnamon
                      Mixed fruits

                      Add fruits to dry ingredients
                      Add three (3) beaten eggs
                      Add liquid to dry ingredients and mix
                      Decorate top with cherries after pouring in tin
                      Bake at 350 degrees for one (1) hour

                      After the bun is baked, glaze top with wine
