    Arjen, here is G2's from the archives:

    Jamaican Spiced Bun

    1 bottle beer or stout (i use beer)
    1 teaspoon mixed spice (optional,but good)
    1 teaspoon cinnamon

    1 Teaspoon ground mace
    OR
    1 teaspoon grated nutmeg

    1/2 teaspoon ground ANISE SEED (a must)
    11/2 cups brown sugar
    1 desert-spoon butter or margarine
    1 desert-spoon honey

    Place these 9 ingredients in a saucepan and heat on low temp. until it all melts.

    ALLOW TO COOL.

    1 cup raisins

    add to cooled beer mixture

    2 eggs
    1 teaspoon vanilla
    1 desert-spoon browning

    Add these 3 ingredients to cooled beer mixture

    ADD

    2 teaspoon baking powder
    1/2 teaspoon salt

    TO

    3 cups flour

    Add the cooled beer mixture to the flour mixture bake at 350'
    Set timer for 50 mins.depending on your oven, check doneness with a cake tester at approximately 45 minutes.

    Turn out of tin and brush with 2 tablespoon of honey diluted with 1 teaspoon water.

    now dats de bomb, fi real....enjoy

    next week I will get bun from Original Patties bakery here, I dont like HTB bun - too dry, I like a fruity bun [img]/forums/images/graemlins/70377-loveeyes.gif[/img] the kraft cracker barrel cheese works, or sometimes I eat the bun with butter

    Arjen, buy name brand bun like National, HTB, Prestige, Maxfield, Purity.
    You ever tried crackers and cheese with guava or strawberry jelly?
    Jamaican cheese is actually New Zealand cheese. Orange in colour and canned, processed so that it can be stored outside of a refridgerator.

    I've never been able to figure out how this tradition started..I know that the Brits love sharp cheeses with sweet things. My god, I've had some orgasmic sandwichs/salads. [img]/forums/images/graemlins/70377-loveeyes.gif[/img] Any ideas?

    no i don't keep the tradition specifically for easter. but i have one son who LOVES bun and cheese. so, it's a regular part of the food budget.

    Hubby, who is Jamaican, must have bun and JA cheese for Easter. We haven't purchased yet but soon [img]/forums/images/graemlins/70371-jump.gif[/img]

    I'm one of those Jamaicans stuck in a time warp..its too overprocessed..I never developed a tast for American cheese because it was soo processed [img]/forums/images/graemlins/70400-talktohand.gif[/img] now come to fine de jamaican one has become even more so [img]/forums/images/graemlins/frown.gif[/img]

    Don't know when you last went to JA..but I'm curious to see what you think of how yard cookings changed.

    An Indian friend once sed to me.."the Indians who live in England are more Indian than the ones at home" I wander if that's not chroo about Jamaicans in some ways... [img]/forums/images/graemlins/70402-thinking.gif[/img] Not a bad thing either way..juss that they move on and the ones abroad get stuck on how tings used to be
