    ABB's Corn Casserole Yumminess...

    Pre-heat oven to 350 degrees

    1 can whole kernel corn, drained
    1 can creamed corn2 eggs, beaten
    1 box Jiffy Corn Muffin mix
    1 stick butter, melted (or 1/2 c. oil)
    1 c. sour cream
    1/4 - 1/2 tsp. garlic powder (opt.) - not optional for me!
    Shredded cheese (opt.) - ditto!

    Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9"x13" baking dish for 30 to 45 minutes or until fully cooked in center.

    And you'd better thank your momma twice...

    If it includes a box mix it can't be the bestest ... FYI...

    Add some jalapenos to that and it will be even better.

    Sweetsop had one of the best recipes for cornbread but my arteries started protesting when discovered the ingredient list.

        is a easy delicious recipe. try it if you dare.

        and it is delicious with real texas chile (no beans)

          Wont try it since I don't use prepackaged mixes. Yep I am crunchy like that

                  Real Texas Chile

                  I brought the cornbread and this chile to a party last night and it was a hit

                  This is my adaptation from a New York Times recipe.

                  No substitutes or it not gwine werk

                  Best if served the next day.

                  Serves 8

                  4 pounds beef chuck roast cut in 2 inch cubes
                  1 teaspoon salt, more to taste
                  3 tablespoons vegetable oil, a little extra if needed
                  1 large yellow onion, chopped
                  5 large garlic cloves, minced
                  2 large fresh green jalapeños, stemmed, seeded and chopped
                  3 tablespoons masa harina
                  2 tablespoons ground pure ANCHO chile powder
                  1 tablespoon ground cumin seeds
                  1 tablespoon ground coriander seeds
                  2 tablespoon dried oregano
                  1 (12-ounce) bottle Negra Modelo beer or any similar Mexican beer
                  1 28-ounce can diced tomatoes
                  1 7-ounce can of Goya chipotle pepper in adobo sauce
                  2 ounces unsweetened chocolate
                  2 cinnamon sticks

                  Serve with:
                  Chopped fresh cilantro
                  Fritos
                  Chopped avocados
                  Crumbled queso fresco

                  Method

                  Sprinkle beef cubes with salt.

                  In a large, heavy pot over high heat, heat oil until shimmering. Brown the meat in batches - don't overcrowd the pot - turning occasionally until crusty. Adjust heat to prevent scorching. As the beef cubes develop a nice browned crust all over, remove the meat to drain on paper towels. Add more oil as needed for browning and continue to work in batches.

                  Do not clean out the pot. Carefully drain off some of the oil.

                  To the empty but crusty pot, add onion, garlic, jalapeños, masa harina, chile powder, cumin, coriander and oregano. Cook, stirring, until onion has softened, 5 to 10 minutes.

                  Add meat, beer, tomatoes, chocolate, chipotle peppers in adobo sauce, cinnamon sticks, and 3 cups hot water. Bring to a gentle simmer and simmer about 1 1/2 hours, or until meat is fork-tender.

                  Taste and add salt if necessary.

                  Let cool. Remove and discard cinnamon sticks. Refrigerate.

                  The next day I reheated chile in a crock pot for about 5 hours on low.

                  Serve in bowls. Sprinkle chopped cilantro and Fritos on top. Or you can sprinkle queso fresco or chopped avocados.
