“This sun-dried tomato vinaigrette is the perfect summer dressing. It complements any tossed salad and it only takes a few ingredients. I am sure that you will enjoy this dressing as much as I did.” Chef Noel Cunningham, Cuisine by Noel

Ingredients

1/2 cup sun-dried tomatoes, packed in oil

2 Tbsp. balsamic vinegar

1/2 cup oil from sun-dried tomatoes

1 Tbsp. chopped fresh basil

1 Tbsp. chopped red onion

1/3 cup parmesan cheese

1 Tbsp. oregano

Pinch salt

Pinch pepper

1 tsp. sugar

Directions 

Add sun-dried tomatoes to a blender and pulse until chopped into smaller pieces.

Reduce speed of blender then add balsamic vinegar and oil to the sun-dried tomato pieces. Pulse until well combined.

Add all the remaining ingredients and pulse until the dressing combines. Pour into a container for serving and put to chill.
