Using fresh ingredients from my garden, we’ll make a classic Caribbean influenced salad that’s light, tasty and quite delicious on those hot and steamy days. Cucumbers, cherry tomato, red onion and flaked salted cod is tossed in lemon juice and olive oil, while we get some heat from a couple bird’s eye peppers which are finely chopped. The entire thing is then topped with some chopped parsley and fresh ground black pepper.

You’ll Need…
3 medium sized cucumbers
1 tablespoon chopped parsley
1/2 lemon
1 tablespoon olive oil
2 birds eye peppers
1/4 cup sliced red onions
2 cups cherry tomatoes (or any tomato you have)
1/2 cup prepared salted cod
