This is a classic Indian influenced dish from Trinidad and Tobago, with similarities to garlic mashed potatoes. However, with the addition of thinly sliced onions and crushed scotch bonnet pepper topped with heated olive oil, it’s more intense in flavors. This classic vegetarian dish adding life to boring potatoes.
You’ll Need….
4-5 medium potatoes
3 tablespoon olive oil
1/2 small onion (thinly sliced)
1 clove garlic
1/2 scotch bonnet pepper
1/4 teaspoon salt
* finely chopped chives
