A traditional Caribbean way of stewing bodi (Yard bean) with salted fish (salted cod) in coconut milk. Using a traditional recipe from Trinidad and Tobago, you can also use French or String beans with basically the same results.

To make this dish fully vegetarian all you have to do is leave out the salted cod and start with the olive oil, garlic and onions.
You’ll Need…
1 bundle bodi (about 1lb)
3 cloves garlic
2 tablespoon olive oil (veg oil works great as well)
1/4 cup water
1/2 cup coconut milk
1 medium onion
1/4 scotch bonnet pepper (any spicy pepper)
dash black pepper
1 cup shredded salted cod
8 cherry tomatoes
