This dish can also be done fully vegetarian if you were to leave out the chicken (and you’ll still have a very tasty island style cabbage dish).

For making this cabbage with leftover stewed chicken you’ll need…

1 small cabbage
1 medium onion
4 cloves garlic
1-2 tablespoon olive oil
1/4 teaspoon black pepper
1/2 scotch bonnet pepper (optional)
1/3 teaspoon salt (adjust)
1 tomato
1 teaspoon curry powder

* remember to wash your hands with soap and water after handling the scotch bonnet pepper and DO NOT include any seeds or the white membrane surrounding the seeds if you’re concerned about the raw heat.
