Recipe – Cinnamon Swirl
Ingredients
• 3 1/2 cups baking flour;
• 1 packet (1 1/2 Tbsps) instant yeast;
• 1/8 cup Grace Hello Margarine, melted;
• 1 tsp salt;
• 1/2 cup sugar;
• 2 cups whole milk;
• 2 small eggs;
• 1/2 cup raisins, soaked;
• 1 tsp cinnamon powder;
• FOR ICING:
• 1 cup icing sugar, sifted;
• 1/4 cup milk;
• 1/4 cup vanilla
Method
1. Combine half the flour with the yeast and mix for even distribution
2. Melt margarine and add salt, 1/2 the sugar and the milk and stir to dissolve the granules
3. Pour the lukewarm mixture into the flour and yeast mixture and mix using a wooden spoon. Fold in the remainder of the flour, the eggs and the soaked raisins
4. Turn the dough out on a lightly floured work surface (1/4 cup – 1/2 cup flour) and knead to form a moderately stiff dough that is smooth and elastic (about 8 minutes)
5. Shape into a ball and place dough in a lightly greased bowl. Cover with plastic wrap or aluminum foil and leave to rise in a warm place until double in volume for about 1 hour.
6. Return the dough to the floured work surface and punch down.
7. Cover and allow to rest for 10 minutes then roll out to a rectangular shape 15 x 7 inches using a lightly floured rolling pin.
8. Brush the surface with a little water
9. Combine remaining sugar and cinnamon powder and mix well.
10. Sprinkle the mixture over the surface of the dough, then roll to form a loaf
11. Pinch the seam to seal the loaf
12. Place loaf in a greased loaf pan, seam side down. Let it rise covered until nearly doubled in volume, about 35 minutes
13. Bake in a preheated oven 180°C (350°F) for about 35 minutes or until brown colour is achieved and hollow sounding when tapped
14. Remove from oven, cool in pan for about 5 minutes then unmold and finish cooling on a cooling rack before slicing and serving
FOR ICING:
1. Combine icing sugar, vanilla and milk and whisk until smooth.
2. Drizzle swirl loaf with the mixture.
