In this recipe we’ll take two favorite Caribbean ingredients, Mango and ginger and put a diabetic friendly twist on muffins. Please refer to the ingredient list to ensure that they meet your specific dietary restrictions. These diabetic friendly muffins are packed with flavor from the ginger, orange zest and mango and kept moist with the sour cream.

You’ll Need..

1 cup almond flour
2/3 cup coconut flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sliced mango
2 tsp. fresh ginger root, grated
1 tablespoon orange zest, grated
2 eggs
1/2 cup sour cream
2 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
3/4 cup Splenda (granulated — measures cup for cup)
1 tablespoon molasses
2 tablespoon pistachio nuts, chopped (optional)
baking spray
