Chris De La Rosa of Caribbeanpot.com shows you a delicious take on eddoes with leftover stewed pork. A wonderful one pot dish, where you can adjust it to be fully vegetarian or you can substitute smoked meats, bacon or salted fish instead of the pork if you wish. Eddoes or coco as it’s called in Jamaica is a root vegetable similar to yams and potato, but with a more sticky and starchy texture.
You’ll Need…
2 lbs eddoes
1/4 teaspoon salt (boiling the eddoes)
pinch black pepper
2 scallions
1 tomato (diced | deseeded)
1 onion diced
2 cloves garlic (sliced thin)
1 tablespoon olive oil
1 tablespoon butter
1 cup stewed pork.
