Tilapia fillets are very versatile and there are many way to prepare them. Here I have fried some and served them up escovesh style. Make sure that you fried them almost to the point of well done to avoid them breaking up on you. You can prepare the sauce if you like or in my case I just added the vegetables and then sprinkled the vinegar over the piping hot fish. I cover them for about 10 mins to let the flavors marry then serve.
