With inspiration from traditional Caribbean roast (grilled) corn, we’ll make a wonderful corn salad topped with a creamy, zest cheddar dressing. Sweet corn is grilled over coals, then tossed with grilled sweet peppers, then chopped scallions are added and topped with the zesty cheese dressing.

Dressing…

1/2 cup cheddar (grated)
1/4 olive oil
3 table spoon lime juice
1/4 scotch bonnet pepper
2 garlic cloves
salt
pepper

6 corn
1/2 tablespoon olive oil (brush corn before grilling)
2 bell peppers (I used red and orange for added contrast)
3 scallions
