Black cake, fruit cake or rum cake as it’s called in the Caribbean is a favorite to have around Christmas time throughout the Caribbean. This traditional recipe for black cake hails from Trinidad and Tobago, but I’m sure it done very similar in Jamaica, Barbados, Grenada, St Vincent, St Lucia, Antigua, Dominica and all the other beautiful islands which make up the Caribbean.
