Chris De La Rosa of CaribbeanPot.com shares a traditional Caribbean recipe using baby bananas (called chikito in Trinidad and Tobago) where you first boil them, then refry with salted fish (salted cod) and other flavorful ingredients. This classic recipe is something he grew up eating on his native Trinidad and Tobago.
For this recipe you’ll need…
1 lb baby bananas (half ripe)
pinch black pepper
1 tablespoon olive oil
1/4 medium onion
1 scallion
1 clove garlic
1/4 scotch bonnet pepper
1 cup shredded salted fish
5 grape tomato (1/2 medium tomato)
