A simple and very tasty way to do salmon in the oven. Caribbean cookbook author and food personality Chris De La Rosa shares his recipe for roasting salmon in the oven in a parchment parcel. Seasoned with dill, fresh ground black pepper, sea salt and placed on an olive oil drizzled bed of sliced onions and lemon slices.. then topped with grape tomato and chives. Though not a traditional Caribbean recipe, it’s an excellent way to do salmon steaks in the oven, that’s also a gluten free recipe.
For this salmon recipe you’ll need…
2 salmon steaks
1.2 white onion
1 cup chopped grape tomatoes
1 tablespoon chopped chives
2 tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon black pepper
2 sprigs dill
4 slices lemon
