There’s no cooking required in this amazing summer chicken dish. In this episode of Tasty Tuesday, Chris De La Rosa will show you how simple it is to make a stunning dish with roasted or rotisserie (even leftover bbq or fried chicken) chicken. This chicken chow is a sort of spicy pickled way to enjoy chicken without a lot of work and a great dish to take with you when invited to bbqs, backyard parties or your typical Caribbean fetes. Students and busy individuals will also find this chicken recipe very easy to put together as you don’t need a full kitchen or a lot of ingredients.
1 roasted chicken (cut into pieces)
1 lemon
2-4 tablespoon water
1 scotch bonnet pepper
pinch sea salt
1/4 teaspoon black pepper
1 clove garlic
3 scallions
2-3 tablespoons chopped cilantro
drippings from roasted chicken (if there’s any)
