Chris De La Rosa from CaribbeanPot.com shares an economical way to prepare tasty crab cakes. These sweet potato crab cakes are done with canned crab meat so it’s less expensive to make, especially if you’re on a budget, but crave something delicious.

You’ll Need…

1 can crab meat (120g)
1/4 teaspoon black pepper
1 tablespoon mayonnaise
1 cup bread crumbs
1 lb sweet potato
1/4 teaspoon salt
1/4 teaspoon thyme
1 tablespoon chopped parsley
1 tablespoon chopped red onion
1/2 scotch bonnet pepper (diced finely) – no seeds
1 scallion diced
1 cup veg oil for frying
