This condiment is very popular in the Caribbean, especially Trinidad and Tobago where it’s used on grilled meats, fresh cut fries and the very popular Bake and Shark sandwiches you get at Maracas Bay. Basically a garlic sauce with Middle Eastern roots, but the overall flavor is heightened by the addition of shado beni or cilantro. This shado beni garlic sauce can also be spiced up with the addition of scotch bonnet peppers if you really want a kick above it’s mellow base.
You’ll Need….
10 cloves garlic
1/2 cup white wine vinegar
1 teaspoon honey (optional)
3 teaspoons sugar
3/4 teaspoon sea salt
1/2 cup extra virgin olive oil
1/4 cup chadon beni (culantro)
Taste for salt and add sugar if necessary
