These Garlic Parmesan Chicken Wings are not a traditional Caribbean recipe, but you will still notice some elements of Caribbean cooking,like the use of scotch bonnet pepper to give the wings a slight kick and the herbal notes we like so much on the islands. For this recipe you’ll need…

3 lbs chicken wings
2 tablespoon veg Oil
1/2 teaspoon salt
1/4 teaspoon black pepper pepper
1 scallion (chopped finely)
2 sprigs thyme
1/2 scotch bonnet pepper (diced fine – no seeds)
3/4 cup finely grated Parmesan cheese
1 tablespoon fresh parsley (chopped)
2 garlic cloves, minced
1/4 teaspoon lemon zest

Note: when seasoning the chicken wings you can also add 1/2 teaspoon garlic powder for that pronounced garlic taste.
