The perfect recipe for making oxtail stew as it’s done in the Caribbean. By adding some cubed potatoes and carrots I’ll show you how to stretch this stewed oxtail dish to serve more people. Taking on a classic Jamaican oxtail recipe, we’ll modify it but still keep the wonderful flavors of pimento berries, herbs and scotch bonnet peppers.
You’ll Need…
2 lbs oxtail
3 potatoes
1 large onion
2 cloves garlic
1 scotch bonnet pepper
1 carrot
2 tablespoon soy suace
1/3 teaspoon salt (adjust accordingly)
1/2 teaspoon black pepper
2 stalks celery
3 scallions
5 sprigs fresh thyme
7 allspice berries (pimento berries)
5-6 cups of water
1 tablespoon tomato paste
pinch brown sugar
