Applewood Smoked Pineapple Chow.

Chris De La Rosa of shows you how simple it is to make a smoked pineapple chow, with the help of Chef Marc. Chow is basically a salad or salsa made with a tart fruit, fresh herbs, garlic and spiced up with scotch bonnet pepper popular in Trinidad and Tobago and the southern Caribbean.

This apple wood smoked pineapple chow is a very versatile vegetarian dish which can be used as a salad, spicy snack, relish or as a salsa for topping burgers and other grilled meats.

For this vegetarian pineapple salad, you’ll need…

1 ripe pineapple
1/2 medium red onion
2 cloves garlic
1/4 teaspoon sea salt
1/4 scotch bonnet pepper
2 tablespoon shado beni (or cilantro)
1/2 lime (or lemon)

Apple wood chips for that smokiness goodness.
