How to make baigan choka (eggplant dip) using your oven to roast the eggplant as it would be done traditionally over an open flame. Caribbean cookbook author Chris De La Rosa shares his recipe for making choka using egg plant as it’s done in Trinidad and Tobago, but he’ll be using the broil setting in the indoor oven to roast the eggplant.

For this baigan choka recipe you’ll need…

2 med eggplant (about 2-3 lbs)
1/4 teaspoon salt
2 tablespoon olive oil
1 teaspoon veg oil
2 cloves garlic
1 scotch bonnet pepper
1 small onion

* If you didn’t already know, baigan is just another name for eggplant. This dish is both vegetarian and gluten free.
