Breakfast On The Grill.

This time we’re doing a one pot breakfast dish on the grill with a few Caribbean elements. We love using fresh herbs as well as scotch bonnet peppers, so I’ve gone ahead and put together a lovely breakfast dish for you which will satisfy those elements . This can also be done indoors in your oven.

You’ll Need…

4 large eggs
2 large potatoes ( I like yukon gold)
1 tablespoon chives
1/4 scotch bonnet pepper
black pepper
pinch sea salt
2 tablespoon olive oil (see note)
1 medium onion
1 tablespoon
1 teaspoon thyme
1 medium tomato
3/4 cup cheese (see note)

* top near the end of cooking with grated cheddar. * Optional

Note: I used some of the bacon fat instead on the oil. use any cheese you like… I used feta.
