Coconut Cheesecake Ice Cream Recipe.

In this recipe we’ll make a delicious coconut cheese cake ice cream. With coconut milk and heavy cream as the base, we’ll create a quick custard, to which we’ll add creamed cheese to give the ice cream that lovely cheesecake taste and to really enhance the coconut background, we’ll add a bit of coconut extract. Then finish up with some vanilla, a squeeze of lemon juice and get your ice cream maker going.

1 1/2 cups heavy cream
2 cups coconut milk
1 1/4 cups sugar
2 eggs, lightly beaten
1 package cream cheese, cubed (12 oz)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon coconut extract
