For this curry pelau you’ll need…

2 boneless/skinless chicken breast (1.5-2 lbs)
1 tablespoon Caribbean Green seasoning
2 scallions
1/4 scotch bonnet pepper
1 med tomato
1/4 teaspoon black pepper
3/4 tablespoon salt (adjust)
1/4 teaspoon garam masala (optional)
1 teaspoon tomato ketchup
2 tablespoon curry powder (divided)
2 tablespoon veg oil
1 can coconut milk (abt 1.5 cups)
2 cups water
2 cups parboiled brown rice
1 can pigeon peas
1 carrot
4 cloves garlic
1/2 small onion
2 tablespoon chopped cilantro
