Dasheen bush (taro leaves) are trimmed, and cooked in coconut oil and milk until tender and takes on a spinach-like taste. Not only is this dish quite tasty, it’s vegetarian and gluten free as well.

For this spinach dish you’ll need…

10-15 cups chopped dasheen bush (Taro) leaves
1 med onion
5 cloves garlic
1/3 teaspoon salt
1/2 scotch bonnet pepper
2 tablespoon coconut oil
3/4 cup coconut milk
3/4 cup water
1/4 teaspoon black pepper
1 tablespoon lemon juice
