How To Make Haitian Pikliz (Picklese).

A quick and simple way to make a classic Caribbean condiment called pik liz. Pik liz or picklese is a traditional Haitian spicy condiment, with fresh scotch bonnet peppers, cabbage, shredded carrot, cloves, garlic, salt and other flavorful ingredients. Balancing the texture of a coleslaw and the heat of scotch bonnet peppers, you’ll quickly get addicted to this wonderful condiment.

You’ll need…

2 cups shredded cabbage
1 large carrot
1 cup bell pepper (green, orange, red)
1 onion
2 scallions
6 scotch bonnet peppers
4 cloves garlic
1 teaspoon salt
12-14 peppercorns
2 cups vinegar (see note)
1/2 lime juice

* 4 cloves (traditionally used)
