Recipe – Jack Mackerel, Celery & Apple Salad
Ingredients
• 1/2 cup Grace Mayonnaise;
• 2 Tbsps lime juice;
• 1 Tbsp sugar;
• 1/4 tsp black pepper;
• 1/2 cup celery;
• 1 medium onion, chopped;
• 1 cup otaheiti apples, diced;
• 2 cans Grace Jack Mackerel, drained;
• 1 pack Grace Elbow Macaroni, boiled & drained;
• 6 lettuce leaves;
• 1/4 cup otaheiti apples, julienne;
• 1/4 cup sweet pepper, julienne;
• 1 sprig parsley, chopped
Method
1. Place the mayonnaise in a bowl.
2. Add lime juice, sugar, black pepper, celery, onion and the diced apples;
3. Flake the mackerel and add to the mixture along with the macaroni and toss;
4. Arrange lettuce leaves on the base of the platter.
5. Place the mackerel mixture on the lettuce leaves.
6. Garnish with julienne apples and peppers and chopped parsley.
