Sofrito is the key ingredient in many dishes in the Spanish speaking Caribbean – Puerto Rico, Dominican Republic and Cuba and it’s very simple to make. Basically a combination of fresh herbs, garlic and peppers for what’s considered the base of Latin cooking. Sofrito is very similar to Caribbean green seasoning which is employed in cooking the very same way in the Southern Caribbean.

For this sofrito recipe you’ll need…

2 Cubanelle peppers (or bell peppers)
1 large onion
12-16 cloves garlic
1 cup chopped cilantro (coriander)
1/2 cup chopped culantro (recao | shado beni | Chadon Beni)
1/4 cup olive oil
