For this jerk chicken dip you’ll need…

4 chicken thighs
1 cup jerk marinade
1/2 cup beer

1/4 red bell pepper
1/4 orange bell pepper
2 scallions
1 block plain cream cheese
3/4 cup diced pineapple
3/4 cup jerk bbq sauce
2 heaping tablespoon sour cream
3/4 cup grated cheddar

* remember to reserve some of the ingredients for topping the dip before placing in the oven
