Vegetarian Stir Fry Bodi (yard beans) With Cashews.

Cookbook author Chris De La Rosa shares his take on a tasty vegetarian bodi stir fry. Bodi is also known as yard bean or bora and it’s a green bean which is grown throughout the Caribbean. For added protein and texture we’ll add some raw cashew nuts to the stir fry as it’s commonly done in Asia.

For this stir fry recipe you’ll need:

1 lb Bodi (aka yard beans)
1 teaspoon soy sauce
1 tomato diced
1/2 onion diced
2 cloves garlic (finely diced)
1/4 teaspoon ginger (grated)
1/2 cup cashews (raw)
1 tablespoon veg oil
1/4 cup water
Fresh ground black pepper
1/4 scotch bonnet pepper
1 teaspoon oyster sauce
