VIDEO: Apple Kuchela Recipe

Cookbook author Chris De La Rosa shares his recipe for making apple kuchela, a spicy condiment usually made with green mangoes. Grated tart apple are cooked with vegetable oil infused with amchar masala, scotch bonnet pepper and garlic for one of the best spicy condiments coming out of the Caribbean. This kuchela is excellent as a topping for Trinidad doubles, aloo pies and other street food.

For this apple kuchela, you’ll need…

5 green apples (grated with the skin)
3/4 teaspoon salt
4 cloves garlic
3-4 tablespoon amchar masala
3/4 up veg oil
2 scotch bonnet peppers
