Grated tart apple are cooked with vegetable oil infused with amchar masala, scotch bonnet pepper and garlic for one of the best spicy condiments coming out of the Caribbean. This kuchela is excellent as a topping for Trinidad doubles, aloo pies and other street food.

For this apple kuchela, you’ll need…

5 green apples (grated with the skin)
3/4 teaspoon salt
4 cloves garlic
3-4 tablespoon amchar masala

2 scotch bonnet peppers

You can purchase the amchar masala at most West Indian markets and there are times you can get it on Amazon.com
