Quick Jamaican Festival Recipe

Festival can best be described as a slightly sweet, crispy cornmeal fritters that is frequently served in Jamaica with fried fish. They get their name because eating them is like having a festival in your mouth.

INGREDIENTS :

  • 2 cup flour
  • 1 teaspoon salt to taste
  • 1 tablespoon brown sugar
  • 1 cup cornmeal
  • 2 tsp. baking powder
  • 1 cup of water
  • 1-quart vegetable oil for frying

METHOD:

  1. Mix dry ingredients together.
  2. Add water to make a soft dough.
  3. Divide into a 5×3 inch flat shape in long dumplings.
  4. Heat the oil to 350° in a large saucepan,
  5. Fry the dumplings until golden all over, 2 to 3 minutes.
  6. Drain on paper towels and serve hot.
