Avocado Orange Salad
Ingredients
6 cups mixed Salad Greens
1 ripe Avocado(large)
1 can Mandarin Oranges in Light Syrup
Dressing-
¾ cup Oil
½ cup White Vinegar
2 tbsp. Red Wine Vinegar
¼ cup Mayonnaise
½ tsp Marjoram
¼ cup Syrup from Oranges
Method
Combine all dressing ingredients and either shake very well or whirl in a blender for 15 seconds. Set aside.
Wash and drain lettuce greens. Use a combination such as romaine, red leaf. frisée and butter lettuce.
Peel avocado and make lengthwise slices. Drain mandarin oranges and reserve syrup.
On individual salad plates, place about a cup of greens. Arrange about 2 or 3 avocado slices and several orange segments on each bed of lettuce. Drizzle the dressing over each plate and serve. Serves 6.
