- 3/4 cup oil
- 3/4 cup honey
- 2 eggs
- 1 tsp vanilla
- 1 cup all-purpose flour
- 3 cups breadfruit flour
- 3 tsp baking powder
- 1 cup raisins, floured
- 1 cup crushed nuts

- Preheat oven to 350°F (180°C).
- In a large bowl, combine the oil, honey, eggs and vanilla and beat together well. In another bowl, sift the flours and baking powder together, and then add to the egg mixture. Fold in the floured raisins. Fill each cup of a muffin tin 3/4 full and sprinkle with some of the crushed nuts.
- Bake for 15 minutes or until done. Muffins are done when the top springs back when lightly touched or a toothpick inserted into the muffin comes out clean.
- Serve warm
