Archeologists have found evidence that jackfruit was cultivated in India some 3000 years ago. Let’s hope the ancient diners enjoyed a salad with the good-tasting ingredients featured in this recipe.

Ingredients:

  • 6 cups fresh jackfruit
  • Juice of 1 lime
  • 1 cup sweetened shredded coconut
  • 3/4 cup golden raisins
  • 16 oz. sour cream
  • 3/4 to 1 cup toasted walnuts, optional

Method:

  1. In a large bowl, combine the jackfruit, lime juice, coconut, raisins, and sour cream. Add more of any of these ingredients to taste. Mix in walnuts, if using, just before serving. (To toast walnuts, place on cookie sheet in a single layer and bake 8 to 10 minutes in a 300-degree oven. Turn over after 4 or 5 minutes.) Serves 4.
