Ingredients:
- 1 tsp. Almond Essence
- 3 1/2 tsps. Baking Powder
- 1 cup Mixed Nuts
- 1 tsp. Mixed Spice
- 1 1/2 cups White Sugar
- 1/2 cup Instant Coffee
- 1/2 cup Milk
- 1 tsp. Cinnamon
- 3 medium size Eggs
- 2 tbsps. Red Label Wine
- 1 tsp. Vanilla
- 2 1/2 cups Cake & Pastry Flour
- 1/2 cup White Rum
- 1 cup Margarine
- 1 tsp. Mixed Spice
Method:
- Heat up your oven to 180°C first
- Chop nuts into pieces and set aside.
- Grease your 25cm baking pan and sprinkle the pan with some already chopped nuts.
- Include eggs, sugar, butter, vanilla and almond essence into a bowl and beat for 10minutes.
- Sift flour, baking powder, coffee, mixed spice and cinnamon.
- Add flour and milk alternatively,starting and ending with flour.
- AddRed Label wine to the mixture and empty mixture into the greased baking tin.
- Put in oven to bake for about 35 minutes and get ready the rum glaze.
