Jamaican Blue Draws Recipe – aka Dukunu

Blue Draws is one of my Jamaican desserts. While growing up in the country (Clarendon) I remember my mother making  blue draws on special occasions.  The banana leaf give it a really nice flavor. If banana leaves are not available you can  use parchment paper or aluminum foil. Blue Draws is also known as tie-a-leaf or Dukunu (Duckunoo or duckanoo). No one knows the origins of the name blue draws.

INGREDIENTS :

  • 3 Cups Grated green Bananas
  • 1 Cup grated coconut
  • 2.5 cups grated sweet potatoes
  • 1 cup flour
  • 1 tsp. Baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 tsp mixed spice
  • 2 cups coconut milk
  • 1 1/2 cups brown sugar

METHOD:

  1. Mix all ingredients together. Place one cup mixture into quailed banana leaves. Wrap and tie with string or banana bark. Put the small parcels into enough boiling water to cover, and cook for one hour. (Serves 8)
